Grandma's Oven Rice

Valerie and Peter grew up with this dish on special occasions, usually served with Sour Cream Chicken. Now a whole new generation loves it too. 

NOTES
- I almost always make a double batch. Extras can always be frozen. 
- It's an amazing recipe for a rice pilaf of any variety -- Mexican rice, Basmati rice, you name it -- just change the type of liquid and add spices, e.g. Mexican rice add water, tomato sauce, and oregano.
  • 1 cup yellow onion, chopped
  • 1 tbsp butter
  • 1 c. white rice
  • 2 c. chicken stock (Grandma uses Wyler's chicken cubes)
Saute onion in butter until transluscent.

Add rice to onion mixture and stir briefly, until the rice turns opaque. Immdediately add 2 cups of chicken stock to rice. Do not stir.

Bring mixture to a boil on the stove and turn burner off.  Cover the pot and bake in the oven at 325F for 20-25 minutes.
