Tofu Coleslaw Peanut Sauce in a flour tortilla.  I think of it as a summer roll in a tortilla.

• Red & Green Cabbage, shredded
• Carrots, shredded
• Tofu strips
• Cilantro
• Red Onion
• Peanut Sauce

BLACKENED TOFU SANDWICH
In a pita pocket or on slices of good bread.

• Blackened organic tofu
• firefly kitchen’s Cordito Kraut,
• Remoulade
• Wild arugula
• Red onion 
• Grand central bakery’s peasant levain
