Grandpa Imi's Eggs
1/2 onion, finely chopped
1 chile, finely chopped (optional)
4 to 6 eggs, mixed in a bowl
oil
1/2-1 tsp salt, or to taste
Simmer the onion in oil on medium to medium low heat. Do not be afraid of using oil; Grandpa uses enough oil so that you can see the oil in the onion. Cook until the onion is soft and just golden around the edges. Of course if it's golden all the way through, it still tastes pretty good.
Mix the eggs together with salt. When the onion is cooked, add the egg mixture. Scramble by turning over sections of egg until all is cooked, about 2 minutes.
