Lecsó (Pepper-Onion-Tomato-Paprika Stew)

This is incredibly good.  Every family's lecsó recipe is different; it is a traditional comfort food in Hungary. The secret is to always have a toothpick in your mouth as you cook (check out the photos at the end)

INGREDIENTS
3 tbsp oil
1 onion, chopped into 1/4" pieces
3-4 tbsp paprika
7-8 peppers (Anaheim, red, yellow, etc.) or 2 bell peppers, sliced and chopped into 1/2" pieces (Dad slices the ends of the chiles until the sides become rectangular and then he chops them into pieces)
2 cans diced tomatoes (or 2-3 fresh tomatoes if they have good flavor)
5-6 cloves garlic, crushed
1 kielbasa. diced (optional)
red or yellow potatoes, sliced into 1" cubes (optional)
salt
pepper
1+ cup water or stock
4-6 eggs, ready to scramble

DIRECTIONS
  1. Simmer the onions in oil until they begin to change color. Add the paprika and stir for a minute or so. Add 1 cup of water and the kielbasa. 
  2. Simmer the mixture for a few minutes and then add the peppers, tomatoes, garlic, optional potatoes, and salt & pepper. Let simmer until peppers are soft  Add water and seasonings as needed.  
  3. Once the peppers and onions are soft (including the skins), add the mixed eggs and stir until they scramble.

Serve over rice or eat it with bread as a stew.
