Paleo Crepe (Banh Xeo)
Sweet or savory, it makes a nice gluten free alternative to traditional crepes. The basic recipe is from Paleo Takeout. Savory can be used as a wrap or sliced into noodles - called banh xeo - serve with sliced meatballs, shrimp, jicama, julienned carrots, lime and mint. Extra batter can be refrigerated a couple of days.
Basic Crepe recipe
1 egg, beaten
1/2 cup tapioca starch
1/2 cup white rice flour (or 1/4 c. almond flour + 1/4 c. tapioca starch)
7 oz (1/2 a can) of full fat coconut milk
1/2 tsp salt
water, as needed
Sweet version
Add 1 tsp vanilla
Savory version
1 tsp turmeric
1 tsp mild curry powder
Mix all the ingredients together. Add water as needed to achieve thin consistency.
