Protein Waffles

The original recipe is from: http://www.12minuteathlete.com/protein-flax-waffles-recipe/. I've adapted it a bit. It is still a work in progress: I made the waffles, first adding milk because the batter was dense (oops! too liquidy); then adding flour to correct for the liquid. Next time, try it without flour or extra milk.

Ingredients:
Makes 4 waffle squares in the Belgian waffle maker. 
  • 1/2 cup cottage cheese
  • 1/4 cup vanilla whey protein
  • 1 tsp vanilla extract
  • 1/2 cup gluten-free old fashioned oats (quick oats will work too)
  • 3 eggs
  • 1 Tbsp ground flax seeds
  • milk and/or flour as needed to get the right consistency. 
Directions: Spray or brush your waffle maker with a little non-stick oil, and start heating it up. While the waffle maker is heating, blend all the ingredients together so you have a nice, semi-liquidy mixture. Try and get all the cottage cheese chunks out if you can.

Pour the waffle mix into your waffle maker, then cook until slightly golden. If you like your waffles extra crunchy, feel free to leave them in just a little longer.

  • 1 cup uncooked old fashioned oats
  • 1 cup fat free cottage cheese
  • 6 egg whites or 1 cup liquid egg whites
  • 1 scoop vanilla protein powder (one that is around 25g of protein per scoop)*
  • 1 TB vanilla extract
  • 1/2-1 TB cinnamon (depending on your palate)
  • sweetener, if desired. i don’t use this because i add my sweet stuff on top.
*you can omit this and the recipe will still turn out perfectly.
