Barbecued Pizza
Make pizza dough. This can be done several hours ahead of time and left, covered, in a refrigerator.
When ready to make the pizza, turn the BBQ on high and let warm up with cover down. Roll out pizzas very thin. Place uncooked pizza rounds directly on the BBQ. You may grease the grate or leave it ungreased. Cook the pizza rounds on one side for about 2 minutes or until crispy but not browned. Take pizza rounds off the grill and flip over (so grilled side is on top). Turn the grill down to a lower heat. Place your toppings on the grilled side of the pizza. Toppings should be light and not watery (so pre-cook mushrooms, tomatoes, etc.) Put pizza on the grill, unbaked side down. It takes 5+ minutes this time, as you want the toppings to heat/melt. When ready, remove and enjoy!
