Maria's Carnitas

I have made these on the stove or in the crock pot. The kids like these too.

3-5 lb pork butt (or pork shoulder)
10 cloves garlic
1 onion, diced
tomatoes, diced (or a can of Rotels or other diced tomato and peppers)
red pepper or green chiles (optional) or red chile sauce
salt, pepper
lime juice

Cut pork pieces into 2" chunks. Put in pot and add about 1 cup of water. Add garlic. Cook for about 1-2 hours on the stove over low heat, until all the fat has been rendered and the water has been mostly absorbed.

When water is mostly absorbed, add tomatoes, peppers onions, salt & pepper. Cook another 1/2 hr to 1 hour or until pork chunks are very tender. Add more water, if needed.

Stir up the pork chunks until shredded. Serve with cheese, sour cream, guacamole, salsa or whatever you like in a quesadilla or taco shell. I squirt some lime juice over it too. Print Friendly and PDF
