Greek Pita Smash Tacos

Grace and Nick surprised us with these for dinner -- and they were great! I'll definitely make this again. The recipe is from Maria Koutsogiannis.

Ingredients

Greek Green Yogurt Sauce
⅓ cup packed fresh cilantro leaves
2 tbsp fresh chopped parsley
2 tbsp fresh chopped mint
1 large garlic clove
¾ cup plain full-fat Greek yogurt (2% or higher)
1 tbsp extra-virgin olive oil
1 tsp salt
½ tsp pepper
1 tsp lemon juice

Red Onion, Tomato Salad
1 cup finely diced red onion (about 1 medium-large red onion)
2 tsp sumac
½ tsp kosher salt
2 tbsp fresh lemon juice
2 tbsp finely chopped fresh parsley
2 tbsp extra virgin olive oil
1 cup finely diced tomatoes

Meat mixture
450 grams (1 lb) lean ground beef
3 tsp Better than Bouillon Roasted Beef Base
1 small yellow or white onion, diced
1 tsp cumin
½ tsp smoked paprika
1 tsp zataar
½ tsp ground pepper
½ tsp garlic powder
½ tsp onion powder
4 - 7-inch thin pita flatbreads

Instructions
  1. Make the Greek green yogurt sauce by blending all of the ingredients for the sauce with a handblender or high-speed blender until smooth and combined. Set aside.
  2. Make the red onion and tomato salad topping by adding the finely diced red onion, sumac, salt, lemon juice, finely chopped fresh parsley, olive oil and diced tomatoes in a bowl. Toss to combine and set aside.
  3. Preheat the flattop grill to medium heat.
  4. While the grill heats, make the meat mixture by adding the ground beef, beef stock paste, diced onion, cumin, smoked paprika, zataar, ground pepper, garlic powder and onion powder to a medium bowl and mix together to combine.
  5. Divide the beef mixture into 4 portions and press each portion into an even layer on the pita, pressing the meat mixture completely to the edges of each pita.
  6. When the flattop grill is hot, spray with cooking spray of choice or oil with a bit of extra virgin olive oil. Add the pitas meat-side down onto the flattop and cook for 4-5 minutes until the meat browns and you get some crispy edges. Flip and cook for about 1-2 more minutes until the meat is cooked through to 165F.
  7. Remove from the heat and serve immediately topped with the tomato salad, diced red onion and a drizzle of the green sauce.
Notes
If you don't have a flat top grill, you can cook these in a large frying pan on the stovetop, just note you'll have to cook them one or two at a time until all are finished cooking.
