Meatloaf (or Meatballs)
Make extra and freeze it for a quick meal. Let it thaw overnight in the fridge, or in cold water for a couple of hours if you forgot. While you don't need to saute the onions, it makes for a nicer consistency. Alternatively, you can grate the onions without sauteeing.
To make meatballs, add 1/3 cup Parmesan to the mix.
1 lb ground beef1 lb ground pork
1 large onion, chopped (if you grate the onion you don't need to saute it)
4 cloves garlic, grated or minced
2 eggs
1/2 cup Panko bread crumbs; 1/3 cup if using finer bread crumbs (omit if going gluten free)
1-2 tsp marjoram or oregano
salt & pepper
1 tsp Worcestershire sauce
ketchup for glazing & serving (Portland is good)
- Saute onion until slightly caramelized. Add garlic and saute for another minute.
- While the onion cooks, mix the ground beef and pork in a large mixing bowl. Add eggs, panko bread crumbs, marjoram or oregano, salt and pepper.
- Add the sauteed onions and garlic. Mix it all together.
- Shape into a log. Spread ketchup on top.
- Cook @375F for 45 mins.
