Dad's Potato Mixture

Think of this as more of an expression of potatoes, meat, and paprika. Sometimes other things get to play, like onions. Mariah says: it is not written down. It used to be diced onions, cooked well, sliced Polish sausage, and large, diced potatoes.

NOTES
April 2023: Dad's not eating the Polish sausage anymore. Valerie made it with finely diced ham.
May 2023: Mariah is now making it with 1-2 cans of the canned ham and cooking the potatoes until they almost look mashed.

INGREDIENTS
Yukon gold potatoes
Onions, finely chopped (depends on how he feels -- sometimes he likes, sometimes he doesn't)
Canned ham, sliced Polish sausage or finely diced ham
1 tsp sweet paprika
1 tsp sharp paprika
salt

If he's eating them, saute onions in olive oil until they are softened about 10-15 mins.

Dice potatoes in large chunks. Place in the pan, add water to cover half way.  Add at least 1 tsp each of sweet and sharp paprika, and salt. Cook for 20 minutes or so, until potatoes are really soft. They are still liquid-y.

Taste and adjust salt and paprika. I added another tablespoon of sweet paprika.
