Updated Grandma's Banana Bread
The original recipe is from Margaret Ludwig and people always ask for it! It is pretty darn accommodating to changes which is good since sometimes I have had to make some substitutions.
⅓ cup oil
¾-1 cup sugar
2 eggs - beaten
1 tsp. vanilla
2 Tbsp. milk or yogurt (can be cow or dairy-free)
2 ripe bananas
2 ripe bananas
2 cups flour
½ tsp. salt
1 tsp. baking soda
1/2 tsp baking powder (don't sweat if you don't have it - just omit and it and carry on)
1 tbsp cinnamon, or to taste
½ tsp nutmeg, or to taste
½ cup chopped nuts (optional)
raisins or dates (optional)
almond meal (optional)
½ tsp. salt
1 tsp. baking soda
1/2 tsp baking powder (don't sweat if you don't have it - just omit and it and carry on)
1 tbsp cinnamon, or to taste
½ tsp nutmeg, or to taste
½ cup chopped nuts (optional)
raisins or dates (optional)
almond meal (optional)
- Spray cooking oil in a loaf pan.
- Cream oil and sugar together in bowl. Add beaten eggs, banana, milk/yogurt and vanilla. Mix.
- Mix flour, salt, soda, baking powder, cinnamon, and nutmeg together really well.
- Add flour mixture to the sugar mixture and combine well. Add nuts and/or raisins here if you would like.
- Pour into greased loaf pan and sprinkle sugar and cinnamon on top of the mixture. Don't be shy with either :-)
- Bake at 350° for 1 hour.
Makes 1 loaf.
