Sweet Chili Dipping Sauce (aka Hot & Sweet Dipping Sauce)
This is from Hot Sour Salty Sweet. Simple and perfect.
Hot and Sweet Dipping Sauce
1/2 c. rice vinegar
1/2 c. sugar
1 to 2 cloves garlic
1/4 tsp salt
1 1/2 tsp dried red pepper flakes
Place all ingredients in non-reactive pot and simmer until sugar has dissolved. Turn the heat to medium-low and simmer another 5 minutes. Remove from heat and let cool to room temperature.
