Pie Crust wth Lard

Just OK.

3 oz butter, chilled
1 ounce lard, chilled
6 ounces flour
1/2 tsp table salt
1/4 c. ice water
  1. Place butter and lard in freezer for 15 minutes. When ready to use, remove the butter and cut into small pieces.
  2. In the food processor, combine flour and salt by pulsing 3 to 4 times. Add the butter and pulse 5 to 6 times.  Add lard and pulse 3 to 4 times.
  3. Remove the lid and put a scant 1 tsp of ice water on the dough. Replace lid and pulse 5 times. Check and see if the mixture holds together when squeezed. If not, add a little more ice water and repeat until it does hold together.
  4. Place mixture in a large ziploc bag and squeeze together to form a ball. Then form a disc shape and refrigerate ate least 30 minutes.
