Pork and Ginger Pot Stickers
Good! The filling would also be great as a meatball served with salad. I purchase the pot sticker wrappers. You can make this an omnivore dinner by also making a vegan filling as long as you are assembling pot stickers.
Pork and Ginger Filling
2 cups napa cabbage
1/2 tbsp salt
3/4 lb ground pork (don't get lean pork)
2 tbsp minced ginger
2 tbsp thin soy sauce
3 tbsp sesame oil
1 egg
1 - 2 cups chicken stock or water.
Spicy Soy Dipping Sauce Combine everything in a bowl.
1/3 c. thin soy sauce
1/3 c. rice wine vinegary
1/3 cl sliced scallions
1 tsp sesame oil
1 tbsp sambal
Hot Water Dough
4 c. all purpose flour
1/2 tsp salt
1 1/2 to 1 3/4 cups boiling water
Directions: Pork and Ginger Filling
- Sprinkle cabbage with salt and let stand 30 minutes. Squeeze out any water. The dryer the cabbage the better.
- Add cabbage to a large bowl and combine with all the other ingredients for the filling, except water.
- Cook a small bit to check seasonings.
Directions: Dumplings Steam or fry. Both are quite good.
- Place a small bit of filling in the middle of wrapper. Do not touch the edges or it will not seal properly. Fold the wrapper in half. Pinch tightly together (using a fork or folding super powers). Rest the dumplings with crimped edges straight up.
- In a hot saute pan coated wtih oil, place the pot stickers flat side down and cook until browned (1-2 mins). Add 1 cup water or stock and cover immediately - the water will splatter so be careful. Check in 5 minutes to see if more water is needed. Let dumplings brown a bit once they have cooked.
Directions: Hot Water Dough
- In a stainless steel bowl, mix flour and salt. Slowly add hot water to flour in 1/4 cup increments. Mix with chopsticks until a ball forms. On a floured surface, knead the dough until it becomes a smooth, elastic ball. Place back in the bowl and cover with a damp cloth. Let it rest for at least 1 hour.
- On a floured surface, roll out dough to form a long noodle, 1" in diameter. Cut 1/2" pieces and turn them ver so the cut side faces up. Flatten with the palm and roll out with a rolling pin to 3" circles.
