Turkey Meatloaf
This is a combination of a couple of different recipes. It was indeed moist and tasty.
2 pounds ground turkey breast
1 cup quick-cooking oats, ground or bulgar or both
2 pounds ground turkey breast

2 eggs
1/2 cup Parmesan cheese, grated on the small holes of a box grater
1/2 cup Parmesan cheese, grated on the small holes of a box grater
1/4 cup finely chopped fresh Italian parsley
1 tsp salt
1/2 tsp pepper
1 1/2 teaspoons minced fresh thyme leaves
1 teaspoon minced fresh sage leaves
1/2 teaspoon freshly ground black pepper
1 teaspoon minced fresh sage leaves
1/2 teaspoon freshly ground black pepper
1 tsp olive oil
1 1/2 c. onion
2 medium garlic cloves, minced
1 tbsp tomato paste
1/6 c. Worcestershire sauce
1/3 c. chicken stock or milk
1/3 c. ketchup
- Place turkey, oats, eggs, cheese, parsley, and spices in a bowl.
- Saute onion and garlic in olive oil, until onions are softened. Add the tomato paste, worcestershire, stock and simmer. Pour tomato/onion mixture into turkey mixture and gently mix. Then form into a loaf pan. Spread ketchup on top of the meat loaf.
- Bake 35 minutes at 350F or until the thermometer reads 160F.
