Tortilla Soup

This was really good.  2+ chiles made it pretty spicy but tasty.  Use 1 chile if less heat is desired.

Ingredients
2 tablespoons vegetable oil (avocado oil)
1.5 medium onion, chopped
4 cloves garlic, sliced
1-2 chipotle in adobo sauce, minced
1 tablespoon chili powder
2 teaspoons kosher salt
6 cups chicken broth, low-sodium canned
1 cup+ corn kernels, fresh or frozen and thawed (I used 1 bag)
1 ripe tomato, chopped
1 can Rotels
2 cups shredded cooked chicken
1 cup cilantro leaves
1/4 cup freshly squeezed lime juice (about 2 limes)
About a dozen corn tortilla chips, broken a bit
Lime wedges, optional (I forgot them)

Saute onions & garlic in oil until soft.  (I put them on low for about 45 mins).  Add chili powder, adobo chiles, Rotels, tomatoes, and chicken.  Add chicken broth and corn.  Bring to a simmer; simmer for 20 minutes or so.  Add cilantro and lime.
