Cake Mix Doctor White Cake
From the Cake Mix Doctor cookbook. This is a great white cake recipe. Adding sliced strawberries to the batter makes for a lovely variant (omit a bit of milk if strawberries are extra juicy).
1 package plain white cake mix
1 c. whole milk
8 tbsp butter, melted (1 stick)
3 large eggs
2 tsp vanilla
1 package plain white cake mix
1 c. whole milk
8 tbsp butter, melted (1 stick)
3 large eggs
2 tsp vanilla
- Preheat the oven to 350F. Grease two 9" round cake pans or line cupcake tins.
- Place the cake mix, milk, melted butter, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape the sides of the bowl Increase the mixer speed to medium and beat 2 minutes more, scraping the sides as needed. The batter should look well blended.
- Bake the cakes until they are golden brown and spring back when lightly pressed with your finger (27-29 minutes for two 9" rounds). Remove from the oven and let cook for 10 minutes.
