Vegetable Stir Fry

This is heavy on vegetables and low on "fry." Amazingly enough the whole family ate it, although the daughter wanted more tofu and the son wanted more (=some) beef. Note this time I used "Tai" Thai sauce in place of some of the fish sauce and soy sauce.

Stir fry:
1 lb medium or large asparagus
1 bunch broccolini
1 zucchini
1 leek
1 bunch scallions, green ends reserved for a fine slicing
1 portabella mushroom, sliced
ginger
5 garlic cloves
1 pkg extra firm tofu

Sauce:
1/2 c. chicken stock
1/4 c. soy sauce
1-2 tbsp fish sauce
a touch of brown sugar
drizzle of sesame oil

Cut the vegetables into similar sizes (e.g. asparagus and broccolini into thirds, zucchini into slices, etc.). Julienne the ginger. Set aside. Mix the sauce ingredients together.

Add 1 tbps of canola/safflower oil into the wok and sear the tofu. When tofu shows some golden bits, transfer to a plate. Add a bit more oil, if needed, before putting leeks and onions in the wok. Stir until they are soft. Then add ginger and garlic. Next add asparagus and mushrooms. When they appear to be almost cooked, add the broccolini. Finally, add the zucchini and the tofu. Pour the sauce into the pan and stir until all vegetables are soft and done. Then drizzle with just a little sesame oil. Print Friendly and PDF
